At Lab Baja Roasters, we source and roast coffees from across Mexico, including regions of Oaxaca, Chiapas, Veracruz, and Guerrero. Each batch is roasted in small quantities in Baja Sur to highlight the unique character of the region and origin.

From bright, citrus-forward coffees to deeper chocolate and caramel notes, our selections are crafted for slow mornings, shared tables, and good coffee every day.
